Crispy Chicken Chipotle Pasta🍝🧀 recipe: For Crispy Chicken: -3 chicken breast (cut in half) -1 tsp garlic powder -1 tsp onion powder -1 tsp smoked paprika -1 tsp dried oregano -1/2 tsp salt -1 tbsp chipotle paste For Chicken Coating: -all-purpose flour (season with garlic powder, smoked paprika, salt and black pepper) -eggs -panko breadcrumbs For Pasta: -215g raw penne -1 tbsp olive oil -1 small onion -3 garlic cloves (minced) -2-3 tbsp chipotle paste -1 cup cooking cream -1 tsp garlic powder -1/2 tsp smoked paprika -1/2 tsp black pepper -1/2 tsp salt -1/4 or 1/2 cup pasta water (adjust based on consistency) -1/4 cup parmesan cheese -In a bowl, season chicken. Marinate for 30 mins -Prepare coating station: 1. Mix flour with seasonings listed above 2. Beat eggs 3. Panko breadcrumbs -Coat chicken in this order flour, egg, breadcrumbs -In a pan, heat some oil. Fry chicken on low-medium heat until golden brown and crispy -Cook pasta according to package directions -In a pan, add olive oil, onion and garlic. Cook for 2-3 mins. Add chipotle paste and cook for 4-5 mins -Pour cooking cream, mix until combined. Add seasonings, pasta water and parmesan cheese. Cook until sauce thickens.
