And if you don't get it just right, your thumbs will push & release little shell fragments...the membrane has more to do with shell fragments than your method. As someone who has been cooking for longer than I care to admit, crack, however you do it, one egg into a cup. If it's shell free, pour it into your final vessel, then crack the next egg into the cup, and so on.
