@andsercoffee: We’re turning a watermelon into a clarified watermelon coffee. To start, begin by blending up our chopped watermelon and straining it to get out watermelon juice. To clarify, add 0.2% agar agar to total juice weight, and mix with a quarter of your watermelon juice. Bring to a boil, and then simmer for another minute (while whisking). Freeze overnight, and then let strain through a paper filter, and you have your clarified watermelon juice. This is our ode to summer. For our pourover cloud, we’re using a Washed Peru Bourbon, visualized on my upcoming coffee app. Mix with Versawhip, Xanthan Gum, cane sugar, and froth until creamy. This is our take on a more delicate vegan cream foam. This is our hello to autumn. Now add our clarified watermelon juice, a large block of ice, and top with our pourover cloud. Very cool! We clarified watermelon in a similar way. If you wanted an easier method, you dont need to boil the watermelon or make cubes. Just heat and bloom the agar in water and strain in the fridge. Might preserve the fresh watermelon flavor a bit too.
