The way he places the signs so quickly is a trick I actually use. If you are in creative mode and press Control+Middle Click on a block like a chest or sign, you will copy the item along with its NBT data. This will make it so a sign won't keep popping up every time, and you can place chests that already have items preloaded in them. This trick only works in creative, but it does work on both Bedrock and Java

You should make the spruce up one block above the water to simulate the waves

To stop the sign editing gui from popping up, place 1 sign down with nothing on it, then hold control and click the middle mouse button while looking at the sign. This creates a copy with the signs NBT data, so if you place the copy down it already has the empty text from the first sign and doesnt ask you to write something.
