As you know, I don’t do a ton of meal prepping—but this is one of them that gets me excited to make and throughout the week. You can cook your own chicken, but I just use an organic rotisserie chicken to save time and you can customize this recipe or add different things in, like provolone cheese, etc!⁣ ⁣ Makes 4 servings ⁣ Creamy Parmesan Dressing:⁣ 1 1/4 cups fat free plain greek yogurt⁣ 1/3 cup shredded parmesan cheese⁣ 2 tb juice from the pepperoncini jar⁣ 3 tb red wine vinegar⁣ 1 tsp garlic powder⁣ 1 tb oregano⁣ 1/2 tsp kosher salt (and more to taste)⁣ 1/2 tsp ground black pepper⁣ 1-2 tb water, if needed to thin⁣ ⁣ Salad:⁣ 1 rotisserie chicken, skin removed, pulled apart and chopped into small pieces (~4 cups)⁣ 2 oz salami, chopped into small pieces⁣ 2 oz pepperoni, chopped into small pieces⁣ 1/2 red onion, finely diced⁣ 1/2 cup pepperoncini, chopped⁣ 1 cup cherry tomatoes, halved⁣ ⁣ First, make the dressing. Add all of the ingredients listed above to a medium bowl and whisk until smooth. Taste and adjust seasonings as needed and set aside. Next, make the salad. Chop the chicken, salami, pepperoni, onion, pepperoncini, and tomatoes, and place everything in a large bowl. Toss well with the dressing. Store in a covered container in the fridge for up to one week or portion into four smaller containers.
