Why are people surprised that a sufficiently sharpened carbon steel knife can... cut?? They are not the same as stainless steel, they can reach a higher degree of sharpness.

the main reason we use a serrated knife for bread is so we don't have to dull our sharp knife, and because certain textures of bread will be harder to cut. like, yeah he cuts bread fine, but I'd like to see him cut thin slices of soft white bread.
