citrus ends, peels , pieces of apple, berries & I use them in simmer pots instead of buying candles. i dehydrate them or just toss them in a pot w some cinnamon or cloves usually

I buy it to freeze it. Celery is almost $4 in the winter here. I buy it in the summer on sale and buy 4 or 5 and cut up. I save it all, except about 1/2" on bottom. I freeze it, dehydrate it and use leaves and stuff for broth. I use it for Chili, spaghetti and soup.
