🍂 FALL COMFORT MEALS | EPISODE 4🍝 Creamy White Wine Sausage & Burrata Pasta INGREDIENTS: * 1 lb large pasta shells * 1 lb mild Italian sausage * 1 red bell pepper, diced * 1 yellow onion, diced * Fresh garlic, minced (measure with your heart!) * 1 can (6 oz) tomato paste * ½ cup dry white wine (I used Sauvignon Blanc) * Heavy cream (enough to create a creamy sauce that coats all the pasta) * Freshly grated Parmesan cheese * Fresh basil * Burrata cheese * Olive oil * Salt & pepper, to taste * Reserved pasta water INSTRUCTIONS: 1. Sauté your veggies: Heat a drizzle of olive oil in a large skillet over medium heat. Add your diced red bell pepper, onion, and minced garlic. Sauté until softened and fragrant. 2. Cook the sausage: Push your veggies to the side of the pan and add your mild Italian sausage. Break it apart and cook until browned and fully cooked through. Mix everything together. 3. Add the tomato paste: Stir in the entire can of tomato paste, making sure everything is evenly coated. Let it cook for about 3 minutes to deepen the flavor. 4. Deglaze with white wine: Pour in about ½ cup of dry white wine. I used Sauvignon Blanc, but any dry white wine will work! Stir everything together, scraping up all those flavorful bits from the bottom of the pan. Let simmer for 3–4 minutes to reduce the wine. 5. Make it creamy: Slowly pour in your heavy cream, stirring continuously until you have a rich, creamy sauce. I didn’t measure this part, but added enough to generously coat an entire pound of pasta! 6. Add Parmesan: Stir in freshly grated Parmesan cheese until melted and incorporated into the sauce. 7. Cook your pasta: Meanwhile, bring a large pot of salted water to a boil and cook 1 lb of large pasta shells according to package directions. Before draining, SAVE SOME PASTA WATER! 8. Combine everything: Add your cooked pasta shells directly into the sauce and toss until completely coated. Slowly add splashes of reserved pasta water as needed to loosen the sauce and create that perfect silky, creamy consistency. 9. The best part: Finish with plenty of fresh basil and generous pieces of creamy burrata cheese right on top! #fallcomfortfood #mealideas #DinnerIdeas #pastarecipe
