@sarahgavigan: Same bones, two pots, two completely different stocks. Half went in the pressure cooker for 1.5 hours with a natural release. Half went on the stovetop, held between 180 and 190°F for 5 hours. Force the release on a pressure cooker, or let the stovetop boil, and you get an emulsion instead. That's paitan, which is a different stock and a different goal. Then I took the leftover bones and pushed them hard for paitan. Rolling boil, add water, let it reduce, repeat until the fat and gelatin emulsify into something milky. I find that if I don’t have feet, legs and wings have been really consistent with a nice jelly texture too but not as good as doing it with chicken feet

Hot pot is exactly what I would do with it. I’ve been making stock for years and freezing it. We go through so much, that quantity is just as important to me as quality. I’ve always left my stock on the stove 48 hours, on barely a simmer. I’m fascinated, though, with the idea of making clear stock and then using the same chicken to make bone broth. How long did you stove cook your stock? (I don’t have a pressure cooker or the space to store one.)
