Enchiladas con Pollo Recipe⬇️✨ Ingredients: - 10 corn tortillas - 1 rotisserie chicken, shredded - 8 oz shredded mozzarella cheese (divided) - Olive oil (for frying) - 1 lb tomatillos, husked and rinsed - 2 jalapeños, stems removed - 1/4 of a small white onion (raw) - 1 tbsp chicken bouillon - Fresh cilantro (a bunch, for blending and garnish) - 1/2 block cream cheese -1 garlic clove --- Instructions: 1. Prepare the Creamy Salsa: - In a saucepan, bring water to a boil and add the tomatillos and jalapeños. Cook for about 10 minutes until softened. - Once cooked, drain the tomatillos and jalapeños and let them cool slightly. In a blender, combine the cooked tomatillos, jalapeños, raw white onion, fresh cilantro, chicken bouillon, and cream cheese. Blend until smooth and creamy. 2. Prepare the Filling: - In a large bowl, mix the shredded rotisserie chicken with half (4 oz) of the shredded mozzarella cheese. Set aside. 3. Assemble the Enchiladas: - Preheat your oven to 375°F (190°C). - In a skillet, heat a small amount of olive oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until they are soft and pliable. This will help prevent the tortillas from breaking when rolling. - Spread a layer of the creamy salsa mixture at the bottom of a greased baking dish or pan. Sprinkle half of the remaining shredded mozzarella cheese on top of the salsa. - Take one tortilla at a time, spoon some of the chicken filling onto it, and roll it up tightly. Place the rolled tortilla seam-side down in the baking dish/pan on top of the salsa and cheese layer. Repeat this process until all tortillas are filled and arranged in the dish/pan. - Once all tortillas are in the dish, pour the remaining creamy salsa evenly over the top. Finish by sprinkling the rest of the shredded mozzarella cheese on top. 4. Bake: - Place the baking dish in the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly. Or on the stove on medium low heat for 10 minutes or until the cheese is melted. 5. Garnish and Serve: - Once out of the oven, let it cool for a few minutes. Garnish with additional fresh cilantro and serve 😮‍💨🫶🏽 #easyrecipesathome #homecookedmeals #mexicandishes #foodcookingrecipes #homecookedmeals
