Rehydrate the dried shiitake mushrooms in warm water for 15-30 minutes. Don’t toss the mushroom water, so you can use it in the marinade 2. Cut pork belly into small pieces and mushroom into dices 3. In a bowl, combine the pork belly and mushroom with the marinade for ~20 minutes. 4. Slice tofu puffs in thirds and lay them flat on the plate, creating a bed for it to soak up all the excess sauce 5. Place the pork belly and shiitake mushrooms on top of the tofu 6.
