Coconut Custard Delight Ingredients For the coconut bites * 1 tablespoon butter * ¼ cup semolina (sooji) * ½ cup desiccated coconut * ½ cup powdered milk * ½ cup regular milk * ½ cup condensed milk For the vanilla custard * 2 cups milk * 1 tablespoon sugar * 1 tablespoon vanilla custard powder Method 1. Heat the butter in a pan and add the semolina. Roast well over low to medium heat until fragrant. 2. Add the desiccated coconut and powdered milk. Mix well. 3. Pour in the regular milk and condensed milk. Stir continuously until the mixture thickens and starts leaving the sides of the pan. 4. Allow the mixture to cool slightly. Shape into small balls or press into your desired shapes using a ghee cutter. 5. For the custard, mix the vanilla custard powder with a little cold milk taken from the measured quantity. 6. Heat the remaining milk with the sugar. Add the dissolved custard powder and stir continuously until thick and smooth. 7. Arrange the coconut bites in a serving dish and pour the custard over them. 8. Serve warm or refrigerate until chilled, according to your preference.
