@amarayamamoto: It’s that time of year! Before the first frost hit, I managed to get all of my green tomatoes inside and I always struggle to keep up with the supply! The majority of my tomatoes end up being roasted and made into my favourite roasted tomato sauce. To make the sauce, I cut all the tomatoes up and place in an oven safe baking dish. I then add either olive oil or butter and slowly roast the tomatoes at 300°f until they’re slightly caramelized and the juices have reduced. This can take between 1-2 hours depending on how many tomatoes you’re roasting. I then let it cool before blending in a high powered blender. You want a nice smooth sauce so I let them blend until it’s completely smooth and the fat (oil or butter) emulsifies and makes the sauce almost creamy. I then place them in bags and into the freeze. I usually try to not season this sauce and prefer to add salt and pepper or any other flavours when I’m making the sauce into something! It’s simple and easy!
