I'm a care home chef and I make this one also with basil or red pepper. I never thought to add sugar to it. I will deffo try your recipe. Sometimes I add chopped tinned tomatoes and puree adds depth to it also a beef stock cube

Try adding some pickled onions, small ones and blitz instead of lemon juice, gives it a good tangy taste
