@girlgonegrilling: Okayyy I’m officially in my sourdough era 😂 I went to a sourdough starter class the other day with @Shirley's Table Bakery Co. in Mont Belvieu, and she sent us home with this sourdough muffin recipe! I made mine with blueberries + added a crumb topping because obviouslyyyyy. 🤤 Save this one for the next time you have sourdough discard to use! Sourdough Blueberry Muffins ½ cup sourdough starter or discard ½ cup neutral oil (avocado or vegetable) 2 large eggs 2 tsp vanilla extract ¾ cup sour cream or plain Greek yogurt ¼ cup whole milk 1 cup granulated sugar 2½ cups all-purpose flour 2 tsp baking powder 1 tsp baking soda ¾ tsp salt Blueberries, about 1 cup Crumb Topping: 2 tbsp unsalted butter, melted ½ cup sugar ¼ cup all-purpose flour Pinch of fine sea salt Whisk together the starter, oil, eggs, vanilla, sour cream, milk and sugar. In a separate bowl, mix the flour, baking powder, baking soda and salt. Add the dry ingredients to the wet and mix just until combined, then gently fold in your blueberries. Divide into 12 muffin cups, about ¾ full, and sprinkle generously with the crumb topping. Bake at 425°F for 5 minutes, then reduce the oven to 375°F and bake another 20–24 minutes, or until a toothpick comes out clean. And thank you @shirleystablebakeryco for teaching me all the sourdough things + sharing the base muffin recipe! 🤍 Now I just need to keep my starter alive. 😂 #sourdough #sourdoughstarter #sourdoughtiktok #discardrecipes #discard
