@britscookin: La Scala Chopped Salad 🥗✨ Someone tell @Kim Kardashian to tell her chef to air fry the chickpeas next time!! Lol- As someone who doesn’t really like chickpeas, I actually loved them like this! Crispy > mushy Salad 1 head iceberg, finely chopped 4–6 oz salami, sliced into strips 1 cup shredded mozzarella 1 can chickpeas, drained + rinsed ¼ cup mozzarella 1 small red onion, thinly sliced ½ cup pepperoncini peppers Dressing ⅓ cup olive oil 3 Tbsp rosé or red wine vinegar 1 Tbsp Dijon mustard 1–2 garlic cloves, grated ½ tsp dried oregano ½ tsp black pepper ¼ cup grated Parmesan ½ tsp Britscookin Garlic & Herb Whisk or shake the dressing until combined. Add everything to a big bowl, pour over the dressing, and toss really well until everything is coated. For the crispy chickpeas: Dry them really well, toss with a little olive oil + seasoning, then air fry at 390°F for 12–15 minutes, shaking halfway. Add them right before serving for some extra crunch!
