I cannot tell you how good the combination of chicken mince & sausagemeat is for creating the SOFTEST meatballs. Wow. Tuscan Meatballs 🤤 Serves 4 You will need: For the meatballs: * 250g chicken mince * 300g sausagemeat * 1 egg * 30g breadcrumbs * Salt & pepper * 1 tsp garlic granules * 1 tsp onion granules * 1 tsp dried thyme * 1 tsp dried oregano * 1 tsp dried parsley Mix all of the above together and use your hands to roll the mixture into meatballs. This quantity should make 18-20. Fry in a large frying pan in a little sundried tomato oil (or olive if you don’t have any) until seared all over. Remove from the pan and set aside. For the sauce: * 1 red onion, finely diced * 40g sundried tomatoes, diced * 5 garlic cloves, minced * 2 tbsp sundried tomato paste * 1 tbsp plain flour * Salt & pepper * 1 tsp garlic granules * 1 tsp onion granules * 1 tsp dried thyme * 1 tsp dried oregano * 1 tsp dried parsley * 400ml chicken stock * 80g chopped spinach * 3 tbsp crème fraiche * 50g grated parmesan Into the same pan you fried the meatballs, add the onion, sundried tomatoes and minced garlic and cook until softened. Then add in the tomato paste, plain flour and seasonings, mixing well and cooking off for 30 seconds or so, before pouring in the stock. Once thickened, add in the chopped spinach, crème fraiche and grated parmesan and mix through. Serve over mash or with crusty bread 😋 #DinnerIdeas #blwideas #weaning #toddlermeals #familydinner
