idk if it’s just me but I can NEVER find any wholemeal muffins anywhere, let alone fermented - but now I don’t need to because these are BETTER 🙂‍↔️ wholemeal fermented english muffins (makes 6): * 180g wholemeal flour * 60g strong white flour + extra for dusting * 3/4 tsp yeast * 1.5 tsp sugar * 1/2 tsp salt * 1 tsp olive oil * 100ml milk * 45–60ml water * semolina for dusting  1. In a bowl mix together the flours, yeast & sugar 2. Add the salt into the flour mix  3. Pour the rest of the wet ingredients in and using a fork mix until combined. Start with 45ml of water and add up to 60ml - the dough should be sticky but not too wet and not ‘batter’ like 4. Cover with cling film and place in the fridge over night or for up to 48 hours - the longer you leave it, the more fermented the dough will be 5. Once risen and fermented, take out of the fridge and leave to rest for 30-45 minutes - the dough should look noticeably risen from fermentation, and no longer really cold to the touch 6. Dust your work surface with a small bit of white flour and place the dough onto it 7. Lightly dust your hands with the flour & dough so it’s easier to handle and not sticky 8. Separate into 6 even balls and shape into disks that are around 1.5-2cm in height  9. Place on a tray that’s been dusted with semolina, cover with a tea towel and leave to prove for 30 minutes in a warm place  10. The muffins should be puffy and slightly risen after 30 minutes, but may take longer depending on room temperature  11. Preheat oven to 180c 12. Heat a frying pan to low/medium heat (dry, with no oil) and cook on each side for 3 minutes until golden brown (it’s okay if they’re not fully cooked through at this point) 13. Place all pan fried muffins onto an oven tray and bake on 180c for around 11-12 minutes until fully cooked through 14. Leave the muffins to cool completely before consuming/slicing in half, as the crumb will continue to set whilst cooling #breakfastmuffin #breakfastrecipes #savourybreakfast #englishmuffinrecipe #wholemealbaking
