Raviolo filled with egg yolk Pasta dough 1 cup all purpose flour 1/2 cups
Raviolo filled with egg yolk Pasta dough 1 cup all purpose flour 1/2 cups "00" flour 2 large eggs 1 tablespoon white wine 2 teaspoons milk Additional flour for rolling out pasta Place the flour in the bowl of a food processor. Mix the eggs, wine and milk in a measuring cup. While the processor is running, slowly pour in the egg mixture. Process until dough comes together. Pinch a small amount of dough between your thumb and forefinger. It should stick and feel smooth. You may need to add a few tablespoons of water or flour. Dust your work surface with flour and knead the dough by pressing against it with the heel of your hand. Turn, fold and press dough until it's smooth. Place dough in a plastic sandwich bag . Rest for 30 minutes. Cut the dough in four. Keep the other pieces covered while you roll out the first piece. Before rolling out the dough lightly dust it with flour and press into a thin square with your fingers. Set the pasta machine to its widest setting, #1 and roll out dough. feed the dough through the rollers. Dust lightly with flour, fold in half and feed one more time in the widest setting. Reshape edges to keep them squared. Roll out lowering the settings and rolling the dough until you have a 1/16th inch thick long sheet of dough. # 5 setting on my pasta machine. Cut pasta sheets into squares. ( my pasta machine makes 4 1/4 inch wide pasta sheets.) I set the ends of pasta on another sheet pan to use as maltagliati/badly cut pasta to use in soups. Set them on lightly floured sheet pans and cover with plastic wrap. Repeat with the other half of dough. 20 4 inch squares Note: You may freeze pasta squares between sheets of plastic wrap and wrapped in foil. They may also be used to make deconstructed lasagna or manicotti. Filling: 1 1/2 cups ricotta 1 tablespoon parsley, finely chopped 1/4 cup Parmigiano cheese 1/4 cup Pecorino cheese 1/8 teaspoon nutmeg 1/4 teaspoon kosher salt 1/8 teaspoon white pepper 4 small organic fresh eggs 1 egg plus 1 tablespoon water for egg wash Mix ricotta, parsley, cheese nutmeg salt and pepper together in a bowl until well blended. Spoon a 1/4 cup of filling and place it in center of a pasta square and make a well in the ricotta by pressing with an egg to make a well. Break eggs one at a time into a small bowl and gently place an egg yolk in the well. Brush the edges of dough with egg wash and gently cover with another piece of pasta dough by starting at one side of each square and drape the pasta square over the filling and egg. Press edges together with fingers making sure to push out any air pockets. Cut around the edges of the raviolo with a pastry wheel. Set aside on a floured sheet pan. You may cut around to make round ravioli. Bring a large pot of water to the boil and add 2 tablespoons of kosher salt. Use a flat spatula to gently transfer each raviolo into the water. Cook for 3 minutes. Lift out and place in the frying pan with the browned butter and sage. Spoon butter sauce over ravioli. Plate in a heated pasta bowl. Drizzle with butter. Add a few fried sage leaves and garnish with grated Parmigiano. Sage brown butter 1 stick butter 12 sage leaves, thinly cut 6 into ribbons Melt butter in a large sauté pan. Brown butter over medium high heat until butter is a golden color. Stir in sage and let them crisp. Set aside.
