In a large pot, cook diced bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot. 2. Add garlic and cook until fragrant, then stir in flour and cook for 1–2 minutes to form a roux. 3. Pour in evaporated milk, heavy cream, and milk. Bring to a simmer, stirring until slightly thickened. 4. Add Cajun seasoning, Dijon mustard, and hot sauce. Stir to combine. 5. Lower the heat and add cheddar, gouda, and mozzarella. Stir until smooth and fully melted. 6. Fold in cooked pasta and the bacon until evenly coated. 7. Transfer half the mixture to a baking dish, sprinkle with some of the extra cheese, then add the remaining pasta. Top with cheddar and finish with paprika. 8.
