Ingredients: - 2 large eggs - 2 medium potatoes - 100g green beans - 100g black olives (pitted) - 150g canned tuna in olive oil, drained - 1 small red onion, thinly sliced - 4 anchovy fillets (optional) - 2 tablespoons olive oil - 1 tablespoon red wine vinegar - Salt and freshly ground black pepper to taste - Fresh parsley for garnish Instructions: 1. Boil the potatoes in salted water until tender, about 15 minutes. Drain, peel, and slice into rounds. 2. Hard boil the eggs: place eggs in boiling water for 10 minutes, then cool in ice water, peel, and slice. 3. Blanch the green beans in boiling water for 3-4 minutes until tender-crisp, then drain and cool in ice water. 4. In a large bowl, combine the potatoes, green beans, tuna, sliced eggs, olives, and red onion. 5. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. 6.
