Add all the ingredients and mix well. Pound the mixture against the cutting board a few times so the patties hold their shape better. Refrigerate for a few hours. Peel the citrus fruits and remove all the white membranes so the marmalade doesn’t turn bitter. Dice the flesh and save the juice to add to the saucepan later. In a saucepan over medium heat, melt the butter and add the grated ginger. Cook until fragrant and lightly golden. Add the citrus pulp and juice. Simmer on low heat until most of the liquid evaporates (about 5 minutes). Add the orange zest and honey, mix well, and cook for another minute. The marmalade should become thick. Remove from heat and let it cool. Shape the chicken patties (about 250 g each). Fry them in a little oil over medium heat until golden on both sides (about 3–5 minutes per side). Finish cooking the patties in the oven at 180°C for another 10 minutes. I simply placed them on the top grill rack. Slice the buns and toast them on the grill until golden. I didn’t use butter, but you can add some for extra color and crunch. Spread a little butter on the top bun. Using tweezers, make tiny holes and place the stems of the edible flowers inside. ⸻ Assemble the burger Bottom bun → citrus marmalade → chicken patty → cheese (I used Cambonzola, a mix of Camembert and Gorgonzola) → carrot salad → flower bun on top.
