Японский бисквит «Кастелла» 🇯🇵🍰 Невероятно нежный, воздушный и мягкий бисквит, который буквально тает во рту. 🤍 Ингредиенты: 🥚 Яйца — 6 шт. 🥛 Молоко — 100 мл 🧈 Сливочное масло — 100 г 🌾 Мука — 100 г 🍚 Сахар — 100 г 🧂 Щепотка соли ✨ Ванилин — по желанию Приготовление: 1. Сливочное масло соединяем с молоком и нагреваем до полного растворения масла, но не доводим до кипения. 2. В тёплую молочно-масляную смесь просеиваем муку и тщательно перемешиваем венчиком до однородности. 3. Отделяем белки от желтков. Желтки постепенно добавляем в мучную массу и хорошо перемешиваем. 4. Белки взбиваем со щепоткой соли. Постепенно добавляем сахар и продолжаем взбивать до мягких устойчивых пиков. 5. В несколько этапов аккуратно вводим белки в основную массу. Перемешиваем лопаткой снизу вверх, стараясь сохранить воздушность теста. 6. Форму застилаем пергаментом и выливаем тесто. Несколько раз слегка постукиваем формой по столу, чтобы вышли крупные пузырьки воздуха. 7. Ставим форму в глубокий противень и наливаем в него горячую воду — бисквит выпекается на водяной бане. 8. Выпекаем при 150°C около 60–70 минут. Готовность проверяем деревянной шпажкой — она должна выходить сухой.
