Bhuna Chilli Chicken 🌶️🍗 Chicken Marinade * 1kg chicken breast, cubed * Juice of 1 lemon * 1 tbsp ginger & garlic paste * 1 tbsp turmeric Add your cubed chicken to a bowl along with the lemon juice, ginger & garlic paste and turmeric. Mix well until the chicken is fully coated and leave to marinate for at least 1 hour, or longer for even more flavour. Set aside. Bhuna Chicken Masala * 3 tbsp olive oil * 2 cinnamon sticks * ½ tsp peppercorns * 1 black cardamom * ½ tsp cloves * 1 tbsp cumin seeds * 2 small onions or 1½ large onions, chopped * 1 tin chopped tomatoes * 1 tbsp Kashmiri chilli powder * 1 tbsp coriander & cumin powder * Juice of ½ lemon * Salt to taste * Fresh green chillies, chopped * 1 tbsp Greek yoghurt * 1 tsp garam masala * Fresh coriander & green chillies, to garnish In a pan, heat the olive oil and add the cinnamon sticks, peppercorns, cloves, black cardamom and cumin seeds. Allow the spices to sizzle for a minute before adding your chopped onions. Saute the onions for 5/8 minutes until lightly golden. Add the chopped tomatoes, Kashmiri chilli powder, coriander & cumin powder, salt and lemon juice. Cook on a medium-low heat for around 15 minutes, stirring occasionally, until the masala thickens and becomes rich. Add your marinated chicken and chopped fresh green chillies. Mix well and cook for a further 5–6 minutes. Lower the heat, then add the Greek yoghurt and garam masala. Mix gently until everything is well combined. Add a small splash of water to loosen the masala and allow everything to cook together. Continue cooking until the oil starts to separate and comes to the surface this is when you know your bhuna masala is ready!Garnish with fresh coriander and plenty of fresh green chillies. Serve with rice or warm naan and enjoy! 🌶️🍗
