Recipe: 🔥🇭🇹 Lalo with Beef, Crab  Serves: 8–10 Ingredients: * 2 bags (200 g total) dried lalo/jute leaves * 1 lb fresh spinach, chopped * 3 lb bone-in beef shanks * 2 lb blue crab, cleaned * 1/2 cup Haitian epis * 2–3 Tbsp sour orange or mojo * 1–2 tsp Maggi seasoning, optional * 1 1/2 tsp salt, or to taste * Fresh thyme & parsley divided  * 1/3-1/2 cup vegetable or canola oil, divided * 2–3 Tbsp butter * 1 whole Scotch bonnet or habanero * 1/2 lime  * 1 1/2 –2 cups water, as needed Instructions: 1. Prep the lalo 🌿 Soak lalo in cold water for 30–60 minutes. Swish to remove any grit, lift it out of the water, rinse again and drain well. Cut any extra-long pieces with kitchen scissors. 2. Prep & season the meat 🥩🦀 Cut the beef around the shanks into small pieces, keeping the bones. Add beef, bones and cleaned crab to a bowl. Clean with sour orange/lime, a little vinegar and salt, then rinse and drain. Season everything together with epis, sour orange/mojo, Maggi, salt, thyme and parsley. Cover and marinate in the refrigerator for about 1 hour. 3. Layer the pot: Add about 1/4 cup oil to a large pot. Layer: 1/2 lalo , 1/2 spinach, beef & bones, remaining lalo, crab, remaining spinach. Add 1 1/2-2 cups water to the seasoning bowl, swirl it around and pour it into the pot. Drizzle a little oil over the top. Do not stir. 4. First touffé  Cover tightly with parchment, foil and the lid. Bring to a gentle simmer, then cook on LOW for about 1 hour 45 minutes- 2 hours. Check the beef. If it isn’t tender, cover and cook another 20–30 minutes. Add the butter, whole Scotch bonnet, parsley, lime juice, Cover again and cook on LOW for 30–40 minutes. 5. Fry it down  Uncover and cook on MEDIUM-LOW for 15–30 minutes, gently turning occasionally, until the excess liquid cooks down and you can see the seasoned oil coming through the lalo. Taste, adjust seasoning and remove the whole pepper. Serve with diri blan ak sòs pwa nwa (white rice & black bean sauce).
