Heat oil in a heavy pot and slowly cook flour and oil into a deep brown roux, stirring constantly to prevent burning. Add diced onion, celery, and bell pepper—the classic Louisiana trinity—and sauté until softened. Stir in sliced okra, garlic, smoked sausage, and Cajun seasoning. Gradually add chicken or seafood stock, stirring well to create a rich, flavorful base. Simmer gently until the okra becomes tender and the gumbo thickens. Add shrimp near the end and cook just until pink and firm. Adjust salt and pepper, then finish with fresh parsley and green onions. The key technique is slowly developing the dark roux, which gives gumbo its signature color, depth, and roasted flavor. Serve hot over steamed white rice.
