Taking birria to a whole other level with this birria ramen 🍜🇲🇽❤️  Ingredients For the Birria - Shoulder Chuck Roast , cut into large chunks - Salt, for seasoning - Black pepper, for seasoning - Oil, for searing For the Birria Consomé  - 6 dried chile guajillo, stems and seeds removed - 2 dried chile ancho, stems and seeds removed - 1 dried chile de árbol - 3 bay leaves - ½ yellow onion - 2 whole cloves - 4 garlic cloves - 3½ Roma tomatoes - ⅛ tsp ground cumin - ½ tsp salt - ½ tsp black pepper - ½ tsp dried thyme - ½ tsp Mexican oregano - 1 tsp Knorr beef bouillon - 1 cup reserved chile cooking water For the Ramen - Ramen noodles, 1 package per serving - Diced red onion - Fresh cilantro - Sliced jalapeños Instructions 1. Prepare the chiles: Remove the stems and seeds from the guajillo and ancho chiles.  2. Sear the beef: Heat oil in a large pot or Dutch oven. Generously season the chuck roast on all sides with salt and black pepper. Sear the seasoned beef on all sides until deeply browned.  3. Boil the meat & chiles: To the meat you add 5 cups of hot water, then add the chile guajillos, chile anchos, chile de árbol, bay leaves, and ½ onion cook until the chiles have softened 4. Prepare the tomato mixture: In a different  pan, fry the 4 garlic cloves, 3½ Roma tomatoes, 3 whole cloves until softened and lightly charred. 5. Blend the adobo: Add the softened chiles, tomatoes, garlic, cumin, salt, black pepper, thyme, oregano, Knorr beef bouillon, and 1 cup of the reserved chile cooking water to a blender. Blend until completely smooth. 6. Cook the birria: Strain the blended adobo over the meat. Cover and simmer over low heat for approximately 3–4 hours, or until the beef is completely tender and easily shredded. 7. Shred the beef: Remove the tender beef from the consomé and shred. Return the shredded beef to the consommé and keep warm. Birria Ramen 1. Cook the ramen: Bring the birria consommé to a boil. Add 2 cups of hot consomé directly to the ramen noodles and let it cook until tender. 2. Assemble: Top with shredded birria, diced red onion, fresh cilantro, and sliced jalapeños.
