Heat oven to 400°F (205°C). 2. Peel the sweet potatoes and beets and slice them into approximately ¼-inch rounds. 3. Toss the slices with olive oil, oregano, thyme, garlic powder, salt, and pepper. 4. Arrange them upright in a baking dish, alternating sweet potato → golden beet → red beet, like the picture. 5. Cover loosely with foil and bake for 30 minutes. 6. Remove the foil and bake another 20–25 minutes, until everything is tender and the edges start to caramelize. 7. Mix the honey + balsamic vinegar, drizzle it over the vegetables, then scatter the feta and walnuts on top. 8. Return to the oven for about 5–8 minutes, just until the walnuts are lightly toasted and the feta is warm. Finish with a little extra oregano or fresh parsley and a tiny drizzle of olive oil#walnuts
