Sausage-Stuffed Flatbread Recipe Ingredients For the dough * 3 cups (375 g) all-purpose flour * 2 teaspoons instant yeast (about 6–7 g) * 2 tablespoons sugar * ½ teaspoon salt * 2 tablespoons vegetable oil or melted butter * ¾–1 cup (180–240 ml) lukewarm milk or water, as needed For the filling * 6–8 sausages * 1 small onion, finely chopped * ½ red bell pepper, diced * ½ green bell pepper, diced * 1 cup grated mozzarella or cheddar cheese * 1 tablespoon vegetable oil * ¼ teaspoon black pepper * ½ teaspoon paprika, optional * 1 tablespoon ketchup or tomato sauce, optional Method 1. Make the dough * Mix the flour, yeast, sugar and salt in a large bowl. * Add the oil and most of the lukewarm milk or water. * Mix until a dough forms, adding more liquid gradually if needed. * Knead for 8–10 minutes until smooth and elastic. * Cover and leave in a warm place for 45–60 minutes, or until doubled in size. 2. Prepare the filling * Heat the tablespoon of oil in a frying pan. * Add the onion and cook for 2 minutes. * Add the red and green bell peppers, black pepper and optional paprika. * Cook for another 2–3 minutes until slightly softened. * Cook the sausages according to their package instructions. If using raw sausages, cook them thoroughly before filling the bread. * Allow the sausages and vegetables to cool slightly. 3. Divide and fill the dough * Gently press down the risen dough to release excess air. * Divide into 6–8 equal portions. * Roll each portion into a small oval, approximately 12–15 cm long. * Place one sausage in the centre of each oval. * Add a little sautéed vegetable mixture and grated cheese. Avoid overfilling. 4. Seal the flatbreads * Fold the dough over the filling. * Pinch the edges firmly together to seal. * Turn each parcel seam-side down. * Gently flatten with your palm or a rolling pin, taking care not to expose the filling. 5. Cook in a frying pan * Preheat a non-stick frying pan over low to medium-low heat. * Lightly grease the pan with oil. * Place the stuffed flatbreads seam-side down, leaving space between them. * Cover and cook for about 4–6 minutes on the first side. * Flip carefully and cook for another 4–6 minutes. * Turn once more if necessary until both sides are golden and the dough is cooked through. Keep the heat low enough for the dough to cook through without burning. If the flatbreads are thick, give them extra time with the lid on. 6. Serve Let the flatbreads rest for 2–3 minutes, then cut one open to reveal the sausage, vegetables and melted cheese. Serve warm with ketchup, chilli sauce or a fresh salad. Tips for the best results * Keep the filling cool: Hot filling can soften the dough and make sealing difficult. * Seal tightly: Pinch all edges firmly to prevent cheese from leaking. * Do not overfill: Too much filling can cause the bread to split. * Use low heat: This is essential for cooking the centre without burning the outside. * For a softer crust: Brush the cooked flatbreads lightly with butter.
