Place the rice noodles in a bowl and cover with boiling water. Leave until softened, then drain and rinse under cold water. 3. Heat 1 tsp olive oil in a large frying pan over medium-high heat. Add the king prawns and cook for 1–2 minutes on each side until pink and cooked through. Remove from the pan and set aside. 4. Add the remaining 1 tsp olive oil to the same pan. Fry the garlic and spring onion for 30 seconds until fragrant. 5. Add the sliced bell pepper and carrot and stir-fry for 3–4 minutes until slightly softened. 6. Add the drained noodles to the pan and toss with the vegetables. 7. Pour over all of the prepared sauce and mix well until the noodles are evenly coated. 8. Return the prawns to the pan and toss everything together until heated through. 9.
