Preheat your oven to 350°F. Line a baking sheet with parchment paper. 2. In a bowl, whisk together the gluten-free flour, baking soda, and salt. 3. In another bowl, beat the softened butter, brown sugar, and granulated sugar until it's light and fluffy. 4. Mix in the egg and vanilla extract. 5. Gradually add the dry ingredients to the wet ingredients. Once combined, fold in the chocolate chips and chopped pecans. 6. For thicker cookies, refrigerate the dough for 20–30 minutes. 7. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. 8. Bake for 10–12 minutes, until the edges are lightly golden and the centers still look slightly soft. 9. Let the cookies rest on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
