Brown stew chicken 🇯🇲  Would you believe me if I told you I haven’t made brown stew chicken for myself properly in about 10 years?😭 I had this on repeat when I first moved out, I’m talking 3-4 times a week minimum! A lot of people don’t know that brown stew chicken and fricassee chicken aren’t the same thing. The methods are somewhat similar, but the outcomes are different. These days most people create a combination of both, which I love to do. It really depends on my mood, sometimes I’ll even fry the chicken, then cook it down by burning the sugar to make browning. The main thing I want you guys to take from this is stop over-killing it with the browning😭 your meat isn’t supposed to be jet black.  Ingredients  4 whole chicken legs split into legs & thighs 2 tsp olive oil  2 bell peppers  1 onion  4 cloves garlic  3-4 spring onions  1 small thumb of ginger  6 stalks of thyme, remove from stem  1/2 Scotch bonnet, diced 1.5 tbsp green seasoning  2 tsp chicken seasoning  1 tbsp All-purpose seasoning  1 tsp semi-crushed pimento seeds 1 tsp ground ginger  1 tbsp soy sauce  2-3 tsp browning  Salt, optional  To add later: 1 spring onion  3 cloves garlic  1 small thumb of ginger, crushed  1 tsp semi-crushed pimento  6 stalks of thyme  Chicken stock or hot water  1 tomato 2 carrots 2 Cyprus potatoes  1 bay leaf  2 whole Scotch bonnet  4 tbsp ketchup  2 tsp brown sugar  Extra seasoning, if needed  Method:  1. Season your chicken with the olive oil, garlic, ginger, thyme, and remaining listed seasonings. keep half of the peppers and onions to add later.  2. Optional, but you can let this  marinate for a few hours or overnight.  3. In your Dutch pot, season the oil with garlic, spring onion, two stalks of thyme, pimento, and ginger.  4. Let that infuse; do not burn! Then remove from the pan and brown your chicken pieces in batches. 5. After your chicken is nice and browned, remove from the pot, drain some oil, and add in your peppers and onion mix from the marinade.  6. Let this sauté on medium heat for a few minutes, add your chicken back in with your tomato, potato and carrot slices.  7. Stir and let this cook for a couple of minutes, then add in your stock, bay leaf, remaining thyme, and the other half of the pepper mix.  8. Bring this to a gentle simmer, add in your Scotch bonnet, and leave to cook covered for 25-30 mins.  9. Once done, adjust seasoning and finish with ketchup and sugar.  #brownstewchicken #EasyRecipe
