I make this but instead of the eggplant I use spinach. Always a very big hit here. We only use the Sapori Del Vallo pasta! Love that brand, especially the cavatelli shape.

Mayb restaurants in NY but in Italy they aren’t serving that dear ! These are American flairs throw everything in with pasta ! Italy they would stop at the eggplant with some light sauce much healthier! But listen you do you !
