It's not really skin, it's the collagen and tendon under the skin usually from cow leg, not buffalo.

dont worry bro..its not str8 cooked from the buffalo..but they boiled the skin for hours 1st...and then the dry it under the sun for days til dry...and then they fried n cook with spices...thats why it taste good n soft...
