Who wants a full plate of Swedish meatballs? 🇸🇪 Had these at a restaurant in Sweden and I think they’re pretty close! Ingredients Meatballs - 500g minced beef - 500g minced pork - 3/4 cups panko breadcrumbs - 1 large egg - 2 tbsp olive oil - 1/4 cup heavy cream - 2 TBSP milk - 1 TBSP dijon mustard - 1 tsp allspice - 1 tsp black pepper - Salt - Butter - Olive oil - Herbs: Thyme and rosemary Gravy  - 1 cup heavy cream - 2 cups beef stock - 1 tsp Dijon mustard Mashed Potatoes (Pomme purée): - 5 Yukon potatoes - 1 cup unsalted butter - 1 cup whole milk - 1–2 tsp salt Cranberry Sauce - 2 cups lingonberries (I used cranberries because I couldn’t find lingonberries) - 1/3 cup sugar - Lemon juice to taste - Salt Quick Pickles - 1 cucumber - 2 cups white wine vinegar - 1 cup water - 3/4 cup sugar - 1 tbsp mustard seeds - Dill Instructions Meatballs - Add panko breadcrumbs to a bowl with heavy cream, milk, a whole egg, and Dijon mustard. Mix and let sit for 5 minutes. - Add ground beef, ground pork, allspice, salt, and black pepper, then mix until well combined. Form into golf-ball-sized meatballs and chill in the fridge for 1 hour. - Sear the meatballs in a pan with olive oil. Butter baste with herbs until fully cooked, then remove the meatballs from the pan. Gravy - In the same pan, reduce the beef stock with heavy cream. Once reduced, add Dijon mustard and whisk to make the gravy. - Warm the meatballs in the gravy before serving. Mashed Potatoes (Pomme Purée) - Boil the potatoes from cold water for about 35 minutes, or until tender. Peel the potatoes while warm, then pass them through a sieve. - Add the potatoes to a pan over low heat and gradually fold in the butter until creamy. - Pour in the milk and season with salt and gently fold. Cranberry Sauce - Cook the lingonberries in a pan over medium heat with sugar and lemon juice until they reach a jam-like consistency. Do not squish the lingonberries so they retain their shape.
