Add the chicken, soy sauce, honey, rice wine vinegar, garlic, ginger, sesame oil, sriracha, and onion to the crockpot. Cook on low for 4½ hours. After 3½ hours, remove the chicken and shred it. Whisk together the cornstarch and cold water, then stir the slurry into the sauce. Add the shredded chicken and broccoli back to the crockpot. Stir, cover, and continue cooking. Cook the lo mein noodles according to the package directions. With 30 minutes remaining, add the cooked noodles to the crockpot and stir everything together. Cover and finish cooking.
