The softest Tres Leches Cake you’ll ever make! This easy, homemade tres leches cake is made completely from scratch with a light, fluffy vanilla sponge, a rich and creamy milk soak, and fresh whipped cream. No boxed cake mix, no store-bought frosting! Just simple ingredients and an easy step-by-step recipe that even beginners can follow. If you’ve ever struggled with a dense sponge cake, this recipe is for you. The secret is gently folding whipped egg whites into the batter for an incredibly soft, airy texture that absorbs all that delicious milk. THE SOFTEST TRES LECHES CAKE RECIPE 9 × 13-inch pan | Oven: 325°F | Best chilled overnight SPONGE INGREDIENTS 6 large eggs, separated (room temperature) ¾ cup (150 g) granulated sugar, divided: ½ cup and ¼ cup 1 cup (125 g) all-purpose flour ¼ cup (30 g) cornstarch 1 tsp baking powder ¼ tsp salt ½ cup (120 ml) whole milk (room temperature) 3 tbsp (45 ml) neutral oil (room temperature) 2 tsp vanilla extract THREE-MILK SOAK 1 can (12 fl oz) evaporated milk 1 can (about 14 oz by weight) sweetened condensed milk ¾ cup (180 ml) whole milk ½ cup (120 ml) heavy whipping cream 1 tsp vanilla extract WHIPPED CREAM TOPPING 1½ cups cold heavy whipping cream 3 tbsp powdered sugar 1 tsp vanilla extract GARNISH Ground cinnamon Fresh strawberries STEP-BY-STEP INSTRUCTIONS 1. PREPARE Preheat oven to 325°F. Lightly grease the bottom of a 9 × 13-inch pan. A light metal pan gives the most predictable results; a glass dish may take longer. 2. SEPARATE AND SIFT Separate 6 eggs. Sift together flour, cornstarch, baking powder, and salt. 3. WHIP YOLKS Beat 6 yolks with ½ cup (100 g) sugar on high for 4–5 minutes until pale and thick. Mix in room-temperature milk, oil, and vanilla just until combined. 4. WHIP WHITES In a clean, dry bowl, beat 6 whites until foamy. Gradually add the remaining ¼ cup (50 g) sugar. Beat to glossy medium peaks. The tips should gently curl, not look dry. 5. FOLD GENTLY Fold ⅓ of the whites into the yolk mixture. Fold in half the sifted dry ingredients, then another ⅓ of the whites, then the remaining dry ingredients. Finish with the remaining whites. Stop when no dry flour or large white streaks remain. 6. BAKE Pour into the pan and gently level. Bake for approximately 28–35 minutes in a metal pan, checking at 28 minutes. Glass or ceramic may need longer. The cake is ready when the center springs back and a toothpick comes out clean. Avoid overbaking. 7. MAKE MILK SOAK Whisk evaporated milk, condensed milk, whole milk, heavy cream, and vanilla until smooth. 8. SOAK CAKE Let the cake cool for approximately 20–30 minutes. Poke holes across the surface. Slowly pour the milk mixture over the cake in 3 rounds, waiting approximately 5 minutes between rounds. Pause if milk pools heavily. 9. CHILL Cover and refrigerate for at least 6 hours, ideally overnight, for an evenly soaked, tender cake. 10. MAKE WHIPPED CREAM Beat cold whipping cream, powdered sugar, and vanilla until medium-stiff peaks form. Spread evenly over the chilled cake and refrigerate until serving. 11. GARNISH AND SERVE Lightly dust with ground cinnamon and garnish with fresh strawberries. Slice, serve chilled, and enjoy! KEY TIP: Keep the whipped egg whites airy and fold only as much as needed. Weigh your flour for a lighter cake. Save this homemade tres leches cake recipe for your next family gathering, birthday, holiday, or whenever you’re craving a soft, creamy dessert! #TresLechesCake #EasyDessertRecipes #HomemadeCake #BakingFromScratch #MilkCake
