Separate the egg whites from the yolks. 2. In a bowl, whisk the egg yolks, milk, melted butter, vanilla essence, and lime juice. 3. In another bowl, mix the flour, baking powder, and salt. Add the dry ingredients to the wet mixture and stir gently. 4. Whisk the egg whites until foamy. Gradually add the sugar and beat until stiff peaks form. 5. Gently fold the whipped egg whites into the batter. 6. Heat a lightly greased pan over low-medium heat. When bubbles appear, flip the pancake, sprinkle a little water around the edges of the pan (not on the pancake), and cover with a lid to help the inside cook through. Cook until golden and fully cooked. 7.
