Fast food outlets cook in large deep fryers, and that oil isn't changed after every batch — it's filtered and reused over many hours, often for days, before it's replaced. That's normal practice in the industry, and it's done to keep costs down and flavour consistent. But oil changes every time it's heated. Food science research shows that repeated deep-frying breaks oil down and builds up compounds that weren't there when it was fresh, including oxidised fats and aldehydes. The more times it's heated, the more these compounds accumulate. Some countries even set legal limits on how degraded frying oil is allowed to get before it must be thrown out.
