Tender slices of beef liver are lightly seared, then simmered with sweet onions in a buttery garlic gravy for a hearty homemade meal. Ingredients • 1 1/2 lb beef liver, sliced into bite-size pieces • 2 large onions, sliced • 1 small red bell pepper, diced (optional) • 3 cloves garlic, minced • 2 tablespoons butter • 1 tablespoon olive oil • 1 cup beef broth • 1 tablespoon Worcestershire sauce • 1 teaspoon paprika • 1/2 teaspoon garlic powder • 1/2 teaspoon onion powder • Salt and black pepper, to taste • 1 tablespoon chopped fresh parsley • 1 teaspoon cornstarch mixed with 2 tablespoons water (optional, to thicken) Instructions Pat the beef liver dry with paper towels and season with paprika, garlic powder, onion powder, salt, and black pepper. Heat the olive oil and butter in a large skillet over medium-high heat. Sear the liver for 2 to 3 minutes per side until lightly browned. Remove and set aside. In the same skillet, cook the onions and diced bell pepper for 6 to 8 minutes until softened and lightly caramelized. Add the garlic and cook for 30 seconds until fragrant. Pour in the beef broth and Worcestershire sauce, scraping up the browned bits from the bottom of the pan. If you prefer a thicker gravy, stir in the cornstarch slurry and simmer for 2 minutes. Return the liver to the skillet and simmer gently for 3 to 5 minutes, just until cooked through. Sprinkle with fresh parsley and serve hot with mashed potatoes, rice, or crusty bread.
