Deeply rooted in the heritage of Italian pastry, Bernardini reinterprets its most iconic expressions through his own refined language of cold pastry and gelato. For this project, he begins with three timeless desserts , tiramisù, cassata, and panna cotta , exploring their origins and essential codes before elevating each through a distinctive ingredient: cacao grué, zagara, and wild blueberries.
