Boil the cassava Bring water to a boil and dissolve the beef stock cube. Add the peeled cassava and cook until tender. Drain and set aside. 2. Prepare the Mojo sauce Heat cooking oil and butter in a pan over low heat. Add the garlic and sliced red onions, then cook gently. Add lemon juice, red bell pepper and red chilli. Season with salt and cook until fragrant. 3. Prepare the spiced beef Heat oil in a pan. Add ginger and garlic and cook until fragrant. Add the onions and cook until softened. Stir in the paprika, turmeric and curry powder, allowing the spices to cook briefly. Add a little beef stock to deglaze the pan, scraping up the flavourful bits. Stir in the oyster sauce, then add the pre-boiled beef and mix well until coated in the sauce. Garnish with fresh coriander. 4. Combine and serve Place the boiled cassava in a large bowl. Pour over the Mojo sauce and toss gently until every piece is coated. Serve alongside the spiced beef and enjoy! ✨ Cooking tip: Cook the garlic over low heat to prevent it from burning, and add the lemon juice to balance the richness of the butter.
