They specialise in beef offal and I tried the beef offal platter - 11 types of offal! I couldn’t name them all, but loved the tendons, honeycomb tripe and liver. Windpipe and ears… not so much. Regardless of what was in it, the broth was sensational it it’s beefy richness. They also serve more conventional meats like brisket and belly.
