Welcome back to Dinner on a Dime season 3, where we share easy, budget-friendly recipes. This time, we’re partnering with our friends at @target to show how GoodCook + Good & Gather make a good team. First up, a delicious, high-fiber Chickpea Hash & Eggs, which you can make for less than $5 per serving. Ingredients: - ¼ C Good & Gather Extra Virgin Olive Oil, divided - 1 medium yellow onion, chopped - 1 red bell pepper, chopped - ½ medium zucchini, chopped - 1 (20-oz) package refrigerated gluten-free shredded hash browns - 1 (15-oz) can Good & Gather Chickpeas, drained - 1 tbsp Good & Gather Curry Powder - ½ tsp Good & Gather Ground Ginger - Salt and black pepper - 6 Good & Gather Large Eggs - Hot sauce, for serving (optional) Instructions: 1. Heat the 12-inch GoodCook nonstick skillet over medium heat (Add 2 tbsp of oil if desired for flavor, but not needed for nonstick). 2. Chop onions, red bell peppers, and zucchini into uniform bite sized pieces. 3. Sauté the onion, red bell pepper, and zucchini for about 7 minutes, or until the vegetables are crisp-tender. 4. Add the hash browns, chickpeas, curry powder, ginger, 1 teaspoon salt, and black pepper to taste. Drizzle with 2 more tablespoons of olive oil. Cook, stirring, for about 5 minutes, or until the mixture is hot throughout. 5. Create six indents around the top of the hash and crack an egg into each indent. Season the eggs with salt and pepper to taste. 6. Lower the heat to medium-low, cover, and cook for 7 to 10 minutes, or until the eggs are cooked to your liking. 7. Enjoy warm and serve with hot sauce, if desired.
