It’s weird to me that veganism became something you had to abandon with your old religion, when the environmental, health, and animal-rights reasons stand on their own, and Christianity has a strong tradition of abstaining from animal products anyway. Many saints and monastic traditions practiced abstinence from flesh, and as you said, Orthodox Christians still fast this way. Genesis itself presents plants as humanity’s original food, with meat permitted only later, similar to divorce, and Isaiah 11:6–9's depiction of God's prophetic kingdom likewise depicts the restored creation as peaceful. Christian stewardship makes the case even stronger. The Catechism explicitly says that our dominion over creation "is not absolute," that animals are God’s creatures entrusted to our stewardship, and that it is contrary to human dignity to cause animals to suffer or die needlessly. Permission is not the same thing as presenting it as the ideal. And veganism is not merely nutritionally sufficient, it's healtheir for us and provides long-term cardiometabolic benefits, lower cholesterol, and lower risks of heart disease, hypertension, type 2 diabetes, obesity, stroke, and cancer. Environmentally, the disparity is enormous too. Vegan diets have 25% of the greenhouse-gas impact, 25% of the land-use impact, and 46% of the water-use impact of high-meat diets. Livestock occupies about 80% of global agricultural land while providing only about 17% of calories and 38% of protein. So becoming Christian is an especially strange reason to become LESS concerned about this. If we can nourish ourselves well while causing less suffering, using fewer resources, and placing less strain on creation, then choosing unnecessary killing simply because it is permitted seems hard to square with the Christian virtues of mercy, temperance, and stewardship. Why, when the harm is avoidable, would a Christian would treat "allowed" as the highest moral standard rather than asking what most reflects mercy toward God’s creatures and faithful stewardship of what He entrusted to us.
