👁️🎃 Mediterranean Monster-Eye Meatballs These spooky Mediterranean meatballs are perfect for a Halloween dinner or party. Juicy turkey or beef meatballs are seasoned with garlic, oregano and herbs, simmered in tomato sauce, then topped with mozzarella “eyeballs” and Kalamata olive pupils. Creepy, fun, and still packed with Mediterranean flavors. 👻🌿 Prep: 25 min | Cook: 25 min | Servings: 6 🛒 Ingredients 🥩 Mediterranean Meatballs 1 lb lean ground turkey or lean ground beef ½ cup whole-wheat breadcrumbs 1 large egg ¼ cup finely crumbled feta ¼ cup finely diced onion 2 cloves garlic, minced 2 tbsp fresh parsley, chopped 1 tsp dried oregano ½ tsp dried basil ½ tsp smoked paprika ¼ tsp ground cumin ½ tsp black pepper Pinch of sea salt 1 tbsp extra-virgin olive oil 🍅 Mediterranean Tomato Sauce 1 tbsp extra-virgin olive oil 2 cloves garlic, minced 1 can (15 oz) crushed tomatoes 1 tbsp tomato paste 1 tsp dried oregano ½ tsp dried basil ¼ tsp smoked paprika 1 tsp honey, optional 2 tbsp fresh parsley or basil 👁️ Monster Eyes 12 small fresh mozzarella balls 6 Kalamata olives Roasted red pepper, optional 👩‍🍳 Instructions 1. Preheat oven to 400°F and line a baking sheet with parchment paper. 2. Add ground turkey or beef, breadcrumbs, egg, feta, onion, garlic, parsley, oregano, basil, paprika, cumin, black pepper and salt to a large bowl. 3. Mix gently until everything is just combined. Avoid overworking the meat. 4. Shape into approximately 12 large meatballs. 5. Arrange on the baking sheet and lightly brush or drizzle with olive oil. 6. Bake for 16–20 minutes, or until completely cooked through. Ground turkey and beef should reach 165°F and 160°F respectively. 🍅 Make the Sauce 7. Heat olive oil in a large skillet over medium-low heat. 8. Add garlic and cook for about 30 seconds. 9. Stir in crushed tomatoes, tomato paste, oregano, basil, smoked paprika and optional honey. 10. Simmer for 10–12 minutes until slightly thickened. 11. Stir in fresh parsley or basil. 12. Nestle the cooked meatballs into the tomato sauce. 👁️ Create the Monster Eyes 13. Slice each mozzarella ball in half. 14. Place one mozzarella half, cut-side up, on top of each warm meatball. 15. Return the skillet to low heat and cover for 1–2 minutes, just until the mozzarella softens slightly. Don't let it completely melt. 16. Slice the Kalamata olives crosswise into rounds. 17. Place one olive round in the center of each mozzarella piece to make a dark monster pupil. 18. For an extra-creepy effect, cut roasted red pepper into very thin strips and arrange a few around the mozzarella to resemble little bloodshot veins. 👁️ 19. Finish with fresh parsley or basil. 🎃 Halloween Serving Idea Spoon the tomato sauce onto a large dark platter and arrange all the monster-eye meatballs over it, with every eyeball facing upward. Serve them with whole-wheat spaghetti, toasted pita, roasted vegetables or a big Mediterranean salad. For a Halloween party, stick a small appetizer fork or toothpick into each meatball and serve the warm tomato sauce on the side for dipping. Approximate Nutrition Per serving (2 meatballs with sauce): 295 calories | 27g protein | 15g carbs | 15g fat | 3g fiber 💡 Monster-eye tip: Let the meatballs cool for 2–3 minutes before adding the mozzarella. If they're extremely hot, the cheese can melt too much and your monster eyeballs will lose their round shape. 👁️🧀 #everyone #followers #highlights #mediterraneanfood #mediterraneanstyle
