Mexican Food For the sauce, roast 1/2lb of tomatillos until soft. Then lightly roast your chiles. The chile de arbol is what makes it spicy. The more you add and the longer you let them roast, the hotter the sauce will be. I usually only roast the peppers for about 1-2 minutes per side. Once it's to the temperature of your liking, you will dump in your nopales and sauce, bring it to a simmer, cover it with a lid, and let it cook on low heat for 8 minutes. Turn the heat off, let it rest with the lid on for 15 minutes, then enjoy! Bringing the sauce to a simmer is key, as well as letting the whole dish rest; it brings out the flavors from the peppers. To portion it out, weigh it and split it into 5 equal portions. Mine came out to 7.2oz of meat and nopales per serving.
