🇵🇭 Ginisang Munggo v1.0  | Filipino Food Bible Ep. 15 Ginisang munggo is one of those Filipino dishes that can look completely different depending on who’s cooking it. Some keep it simple, some add tinapa, but for my version today, I’m throwing etag into the mix. Etag is a traditional Cordilleran preserved pork, usually salted then air-dried or smoked. It has a deeply savory, smoky, slightly funky flavor that adds a lot of flavor to soups and stews. Highly recommend this to you guys! Most measurements are estimates. Season and adjust to your liking :) INGREDIENTS: Ginisang Munggo: - 500g munggo, soaked and boiled - 1 1/2  cup etag, chopped - 250g of shrimp - 15-20 cloves of garlic, chopped - 1-2 red onions, chopped - 350g Cherry tomatoes - Pork broth as needed - Chicharon to taste - Fish sauce, adjust to taste - 3-5 Green chilies, adjust to spice  - 1 large ampalaya - 3-4 handfuls ampalaya tops - 3-4 handfuls alugbati  INSTRUCTIONS: - Soak the munggo in water for an hour or overnight, then drain. Transfer to a pot, cover with fresh water, and boil for 30 minutes or until slightly tender. - Add the etag to a pot and slowly render out  its fat. Add the garlic and onions, then sauté until softened. Add the cherry tomatoes and cook them down until soft and jammy. - Add in the cooked munggo followed by the pork broth, shrimp and chicharron, then season with fish sauce and mix and let simmer for a 5-10 minutes. - Add the ampalaya, green chili, and leafy greens toward the end. Mix everything together and let cook for aroujnd 3-4 mins - Serve and enjoy! #FilipinoFood #Filipino #ASMR #CookingASMR
