@yumlabels: The best things I’ve ever made fr RC: glow.with.heidi 2 cups cold brew 3 1/2 packets unflavored gelatin 2/3 cup brown sugar 1/2 Tbs vanilla 1 cup espresso vodka 1 cup kahlua 2 cups heavy whipping cream 1 cup Irish cream liqueur (Baileys or Kavanagh) Chocolate shavings Pour cold brew and 2 packets of gelatin in a saucepan and whisk together. Let it sit on the counter for 10 minutes to activate the gelatin. After 10 minutes, whisk in brown sugar and vanilla. Place saucepan on the stove over medium low heat and whisk until sugar dissolves but doesn’t reach a simmer, about 4-5 minutes. Whisk in the vodka and kahlua. Transfer mixture into a glass measuring cup for easy pouring. Pour into Jell-O shot cups about halfway full (makes about 45). Refrigerate for one hour. For the top layer, whisk together heavy whipping cream, baileys, and 1 1/2 packets of gelatin into a saucepan. Heat it over the stove just until it starts to simmer (you don’t want it to boil). Pull the Jell-O shots from the fridge and top them off with a thin layer of the cream mixture. Refrigerate for another hour.
