Continue mixing your dough at medium speed until smooth, add your raisins. Keep mixing for 8-10 more minutes until the dough feels strong and elastic. It should be slightly tacky but not sticky. Shape your bagels and set on a lined sheet tray to proof for 1.5-2 hours. Put in the fridge overnight. The next morning, pull out your bagels and let them come to room temp on the counter while you bring a large pot of water with barley malt and baking soda to boil. Boil your bagels for 30 seconds a side, then bake at 450 for 18-20 minutes. For extra lift, add a steam tray at the bottom for the first 10 min.
